Vegan Croque Monsieur

Ingredients
For the Croque Monsieur:
4 slices of sandwich bread
Margarine
Dijon mustard
Shredded vegan cheese
1 pack of Heura York Ham Style slices
For the Béchamel Sauce:
40 g margarine
500 mL unsweetened soy milk
2 tablespoons flour
Nutmeg
Salt
Black pepper
Preparation
- 1In a deep pot, add the margarine and melt over medium-low heat.
- 2Add the flour and mix until it loses its raw smell (2-4 minutes).
- 3Gradually add the soy milk, stirring continuously with a whisk or wooden spoon.
- 4Once the sauce reaches your desired thickness, it is ready. Season with salt, pepper, and nutmeg.
- 5Spread margarine on one side of each slice of bread and toast in the oven. Once done, remove the bread and preheat the oven to 180°C (350°F).
- 6On the un-toasted side, spread 1 teaspoon of Dijon mustard and 1 tablespoon of béchamel sauce.
- 7Place 2 thin slices of Heura and vegan cheese to taste on each slice of bread. Close the sandwich.
- 8Add more béchamel sauce on top of the sandwiches and cover with more vegan cheese.
- 9Bake the sandwiches in the oven for about 10 minutes.
